WHere is a simplified interpretation of a drink found on the seasonal drinks list. It's a party-sized prepared mix that's bursting with the flavours of a holiday season, making it ideal for a festive gathering. Any leftover citrus syrup for brunch beverages, sweets, or for another batch of this cocktail.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Place all the ingredients inside a saucepan, bring to a light boil, stirring until the sugar dissolves. After that, remove from the burner and leave to cool completely. Pour into an clean bottle, close it keeping it in the fridge, it can be stored for about a month.
Preparing the Batch Mix: Pour the specified liquid ingredients into one big jug, leave to sit for an hour, then filter it best through muslin, so it's completely strained.
For serving: Pour 85ml of your batch mix to a mixing glass filled with ice, gently stirring carefully for one minute to chill. Strain into a frosted cocktail glass or a similar vessel, decorate with a few cranberries adding the final touch with a light spray with the mandarin essence over the top.
